REAL, FRUGAL, HEALTHY, and FUN!!!
Canadian Thanksgiving is coming up! This is a super traditional, Canadian treat! I believe it’s also common in Europe. It’s typically made with a lot of cream, butter, and of course sugar. Not today, people! I remade it, and I’m happy to say it is sooo much better for you, and sooo yummy! Check out this recipe.
1 cup cashews
1 8 oz package of chopped dates
1 can full-fat coconut milk
2 tsp maple syrup
Directions: Place cashews, chopped dates, coconut milk, and syrup in a container overnight. We’re going to skip over to the crust for a minute, but keep that egg because we’ll use it when we come back to the filling.
1/2 cup coconut flour
3/4 cup tapioca flour
1/2 cup coconut oil
1 tsp vanilla
Directions: Preheat oven to 350′ and place cupcake liners in cupcake pan. Mix all ingredients thoroughly in a bowl. I started with a fork, but ended up kneading with my hands. Place a small spoonful in each cupcake liner. You will have way more than enough. Press the dough around the bottom and a little up the sides. Bake for about 5 minutes. Keep oven on. You’ll need it again shortly.
Back to the Filling…
Directions: Dump the contents of the container you soaked overnight (cashews, dates, coconut milk, maple syrup), into your blender. Add egg and run blender until smooth and creamy. Pour filling over tartlet crusts. Bake for approximately 12 minutes. Let cool completely. Enjoy!!!
Now you can enjoy a traditional favorite with a whole lot more bang for your bite. I came up with the term ‘bang for your bite’ as a way of referring to carbs worth eating. If you compare all of the carbs in the world, ‘bang for your bite’ carbs are the ones that go above and beyond. They’re the ones that have a lot of nutrients to give to your body. I call bad carbs, ’empty carbs.’ They’re the ones with little to nothing to offer besides calories and well, something to chew on. Carbs are really good for you, as long as you eat the ones that have a lot of ‘ bang for your bite,’ and eat them in moderation.
So here, I’ve given sugar pie a lot more ‘bang for your bite.’ I’ve added fiber, medium chain saturated fats, fiber, vitamins, minerals, antioxidants, including polyphenols! Holy Moly! You still get to indulge, but now, you get something out of it beyond the few minutes it takes to eat it.
