I like variety. I like coming up with new chip flavors. It’s such a fun way to eat some of the different vegetables. The flavor and the crunch are amazing for those times you are craving junk food and really don’t want to give in. I always use healthy fats as my oil, so it doesn’t take away from the nutritional value of the chips. I like to add different herbs as spices each time because they all have different benefits for our bodies. I love the combination of sweet and savory. This recipe really captures that.
Ingredients:
1 VERY green plantain
1 Tbsp avocado oil
1 Tbsp molasses
1/2 tsp garlic
1/2 tsp ginger
1/2 tsp salt
Directions: Preheat oven to 250′ and line cookie sheet with parchment paper. Remove peel from plantain. Slice thinly. Place plantain, oil, molasses, garlic, ginger, and salt in a plastic bag and shake until well-coated, or in a mixing bowl, and stir until well-coated. Place slices on cookie sheet and bake 30 minutes or until golden and crispy.
Thank you for this recipe. I like plantain, At home my mother used to boil and mash it then seasoned it. I’d love to try your recipe. 🙂

I haven’t done a lot of recipes with mashed plantains, but I’m wanting to try more.
