Paleo Maple Caramel Mug Cake

Never underestimate the deliciousness of a mug cake.  Sure, for casual eating, you can make it in your mug and eat it right out of it with a spoon.  However, you can also turn it out of the mug, add toppings, and just get your inner baker on with it.  With this particular mug cake, I turned it out, sliced it into thirds, horizontally, so I could pour homemade maple caramel in between the layers and over the top.  All I can say, is Ah-Maze-Ing!  Holy cow!  It was incredible!

Cake Ingredients:

2 eggs

2 Tbsp full-fat coconut milk

3 Tbsp maple syrup

3 Tbsp banana flour (you could sub tapioca flour)

1/8 tsp baking soda

Directions:  Combine all ingredients in a large mug or glass measuring cup.  Mix well.  Microwave 3 minutes.  Turn mug/cup over onto a plate to remove the cake.  Slice horizontally into thirds.  Prepare caramel topping.

Caramel Ingredients:

1 Tbsp butter

2 Tbsp full-fat coconut milk

2 Tbsp maple syrup

Directions: Combine ingredients in small saucepan over medium heat.  Stirring frequently, bring to a boil.  Allow to boil 5 minutes.  Pour over cake layers, re-stacking the layers as you go.  Enjoy
