Paleo, Mummified, Bacon, Apple Butter, Wasabi Halloween Crock Pot Roast Beef

mummified roast

I made this ghoulish Halloween roast for the family on Tuesday.  I’ve just been busy and haven’t had a chance to post it til now.  We named this gruesome mummy, George.  He didn’t start out these creepy and grotesque, but while cooking, the wasabi bubbled up and oozed through it’s bacon mummification wrappings.  It was pretty awesome!

The flavor was so good.  It had the sweetness of apple butter, and the heat of the wasabi.  Wasabi and apple butter are not often paired together, but let me tell you, they should be!  They really bring out the best in each other.  Anyhow, here is how my gruesome, mummified George was made.

3 lb bottom round roast

1/4 cup apple butter

2 Tbsp wasabi

5 slices bacon, cooked

1/4 cup onion

1 tsp salt

1 tsp turmeric

1 tsp oregano

1 tsp rosemary

Directions:  Sear all sides of roast in a skillet on medium heat.  Place roast into a crock pot.  Using a sharp knife, cut a deep pocket, lengthwise through the roast.  Fill the pocket with the apple butter, followed by the wasabi.  Sprinkle salt, turmeric, oregano, and rosemary over roast.  Use the onion and bacon to creatively create a mummified face.  Use the onion for eyes and teeth.  Use the bacon for mummy wrappings.  Place lid on crockpot.  Set crock pot on low for 4 hours.  Enjoy!
