REAL, FRUGAL, HEALTHY, and FUN!!!
I love a nice treat, occasionally. I love it even more when I can feel good about the ingredients it’s made with. I made my first vegan cookies in my dehydrator last week. They were amazing! No joke. No exaggeration.
2 oz Sweet potato
5 oz apple
3 oz walnuts
1-1/2 Tbsp chia seeds
1 Tbsp Cooa
3 Tbsp Chocolate chips
Directions: Combine sweet potato, apple,banana, walnuts, chia, and cocoa in your blender (all produce should be raw). Bend until smooth. Place large dallops of the batter onto your dehydrator trays. Depending on the type of trays you have, you may want to line them with parchment paper (I did). I made 14 dallops with mine. It took mine about a day to crisp into cookies. You want them crisp to the point that they snap when bent. Not a chewy cookie. A crisp cookie. At this point, begin making the filling. Remove the cookies from the dehydrator. In a small ball, combine the half banana and chocolate chips. Heat until the chocolate chips melt and the banana mashes easily. Mash together until smooth. Spread filling on half of the cookies, and top with the remaining cookies to form sandwiches. Enjoy!
