Chocolate Cashew Coconut Brownie Bar

I absolutely love my Apple Cinnamon Fruit & Nut Bars!  They are amazing, but a girl’s gotta have some variety!  Here I go again, and man am I good!  I knew I wanted dates again as my base, and I love having the nuts in there for their crunch and flavor, as well as their healthy fats and protein.  This time, however, I wanted chocolate.  This is so good!  In the picture, I have it cut as a bar that I then wrapped and put in my purse for while I ran errands.  You could also cut it into squares and serve as a raw brownie.  It’s that good!

Ingredients:

1 cup dates

1Tbsp water

1 Tbsp cocoa

1/2 cup cashews

1/4 cup unsweetened shredded coconut

Directions: Puree dates, water, and cocoa in your high-powered blender.  Don’t be alarmed if your blender shuts off a few times.  I have a vitamix, and mine did.  I just turned it off, unplugged it, waited a minute, and got right back to it.  Once it’s fairly pureed, add the cashews.  Blend until the cashews are chopped up, but still a little chunky.  Spread half of the shredded coconut on the bottom of an 8″x8″ pan (you don’t need to grease the pan, the coconut keeps it from sticking.  Scoop contents from blender and place in square pan, over coconut.  At this point I put a little oil on my fingers so I could press it down and smooth it out.  Then, I sprinkled some more shredded coconut on top and pressed it down a little more.  I keep mine in my fridge, though I believe they’d be ok at room temperature.  I let mine set in the fridge uncovered for about an hour and then I covered them.  I wanted to give them a minute to dry a bit because of the bit of water.

*Increase cocoa to 2 Tbsp for a richer chocolatey flavor.*
