Chocolate Chip Banana Nut Muffins

Chocolate Chip Banana Nut Muffins

Cooking and baking relieve stress for me.  Sometimes, I cook/bake for no real reason, other than stress-relief.  I find it very relaxing.  This recipe came about from one of those no need to cook/bake episodes.  I decided to soak some dates.  I saw some bananas.  I just let myself go and I really nailed a good one.  The last time I made banana muffins, I followed someone else’s paleo recipe, and I was not thrilled by it.  Now these, however, you would never know are paleo.


1 cup chopped dates

1/2 cup coconut water

3 ripe bananas, mashed

1 egg

2 tsp baking soda

2 cups almond flour

1 tsp cinnamon

1 tsp almond extract

1 cup cashews

1/2 cup chocolate chips

Directions: Soak dates in coconut water for 2-3 hours.  Preheat oven to 350′ and grease muffin pan.  Puree dates and coconut water until smooth.  Mash bananas in a large mixing bowl.  Add date/coconut water puree.  Add egg, baking soda, almond flour, cinnamon, and almond extract.  Mix thoroughly.  Add cashews and chocolate chips.  Give it a quick stir.  Fill muffin cups 3/4 of the way.  Bake for about 18 minutes.  Enjoy!
