REAL, FRUGAL, HEALTHY, and FUN!!!
Inspired by the curry chicken my husband wanted to make for dinner, I decided to make a chia pudding for dessert. Of course, this is healthy enough to eat anytime of day, but it was just perfect following curry chicken. It’s super easy to make. Check it out.
3 cups coconut milk (the kind in the carton, not the can)
1 cup chia seeds
1 tsp vanilla
1 cup cooked rice
2 cups chopped mango (I bought frozen, and thawed it in advance)
Directions: Thoroughly mix coconut milk, vanilla, and honey. Add chia seeds, mix well, cover, and store in fridge overnight, or at least 4 hours. Add rice and mangoes. Enjoy!
I’m not a huge fan of rice. I love how inexpensive it is. It goes with so many things. It’s a quick source of energy. However, it’s something I tolerate in small amounts. If I eat too much of it, I get really bad hiccups and my throat gets a little tight. In the actual Indian dish it ‘s a rice pudding. I opted to add just a cup of rice to give it that rice puddingish effect. If you prefer, you can omit the rice for a grain-free pudding. For me, the 1 cup of rice was completely tolerable. Feel free to add spices if you wish. Cinnamon and nutmeg would be great. You can adjust the amount of honey and just really make this dish your own.
