Paleo 21 DSD Carrot Banana Porridge

Carrot Banana Porridge

This was really yummy!  Now, I understand if you think it sounds a little weird, but give it a try.  It’s yummy and comforting.  I could eat it again and again.  It’s also plenty sweet with just 1/4 green tipped banana.

Ingredients:

1/2 Carrot grated

1/4 cup crushed pecans

1/4 cup unsweetened shredded coconut

1/4 green tipped banana, mashed (I peel, cut 1/4’s and freeze immediately after purchasing.  When they thaw, they mash well)

1/2 cup coconut milk

1/8 tsp cinnamon

1/8 tsp nutmeg

1/8 tsp ginger

Directions: Combine carrot, pecans and coconut.  Add the mashed banana and the coconut milk.  Warm in the microwave for 1 minute and 30 seconds or heat in a small saucepan.  Sprinkle cinnamon, nutmeg, and ginger on top.  Enjoy!
