Paleo 4-Ingredient Applesauce Muffins

My husband is trying to lose a few pounds.  To be a good support system, I opted not to stock up on my usual honey, maple syrup, and dates.  In fact, I bought very little fruit this week. I kind of went vegetable crazy.  I did buy some green apples and applesauce.  I also still have a few chocolate chips and dried fruit which I’ll probably use for a treat while he’s at work.  Today he’s home and I wanted to keep breakfast simple.  I made these basic, 4-ingredient muffins.  You can add spices or chopped fruit to them.  They’re not very sweet.  They’re delicious warm with almond butter, coconut butter, or even a nice grass-fed butter.


2 cups almond flour (meal works too, but expect the result to be more mealy)

1 cup unsweetened applesauce

1 tsp baking soda

1 egg

Directions: Preheat oven to 350′ and line cupcake pan with liners.  Mix all ingredients thoroughly in a medium-size bowl.  Scoop batter into 12 liners.  Bake for 23 minutes.  Enjoy warm from the oven.  Also, a great option for a grab-and-go breakfast.
