Paleo Avocado, Green Pepper, Bacon, And Onion Stuffed Pumpkin Omelet

pumpkin omeletThe thought process for this dish began when I decided I wanted to make something with bacon and pumpkin.  It kind of took off from there.  I started thinking about what I could put with it.  Then I had this idea for a pumpkin omelet.  I’d never had a pumpkin omelet before, but it sounded fun.  It’s delicious.  The pumpkin isn’t over-powering or anything.  It all goes together really well.

Ingredients:

2 slices bacon, chopped

1/2 green pepper, chopped

1 – 1/4″ slice onion, chopped

1/2 avocado, chopped

2 eggs

2 Tbsp pumpkin

Dash of salt

Directions: In a skillet, over medium heat, cook up bacon, green pepper, onion, and avocado.  Stir occasionally to avoid burning.  Allow to cook til everything is lightly browned and sautéed.  Move contents of skillet into a bowl or plate temporarily.  Whisk eggs, pumpkin, and salt together in a small bowl.  Pour onto skillet and allow to cook.  Add veggie/bacon mixture on top of one side of the cooking pumpkin/egg.  Use spatula to flip the open side of the pumpkin/egg over and complete the omelet form.  Allow to cook a minute longer, flip it over, cook one more minute.  Remove from heat and set on a plate.  Enjoy!
