Paleo Banana Pancakes

Adam, my 7 year-old told me I should post these.  The cinnamon makes them look a little dark, so I didn’t want anyone to be turned off by that.  Trust me, they’re yummy!  My grain-free flours are running low.  I was looking at them this morning, and I really wanted pancakes.  I wasn’t sure if this was actually going to be a flop.  I figured the outcome would probably be more like a crepe or sorts.  You know, very thin.  Honestly, I’m still amazed.  Now, to me they came out perfect.  I’m not a huge fan of super thick pancakes, so if you are these may not be your thing.  I like mine to rise and fluff, but sometimes I see pictures or pancakes that look as if to be 1-1/2″ thick.  I don’t go for that.

Ingredients:

1 banana

3 eggs

2 Tbsp coconut flour

2 Tbsp almond flour

1/4 tsp baking soda

1/2 tsp cinnamon

Directions: I threw everything in the blender to mix, but you could easily mix all the ingredients in a bowl.  With your skilled heated to medium-low heat (mine was at 4), pour enough batter to make silver dollar pancakes (you know, the small easy to flip kind).  Feel free to try larger ones, I like small ones that fit the size of my spatula, for easier flipping.  Top with butter, coconut butter, or almond butter and a drizzle of maple syrup.
