Paleo Banana Pumpkin “Bread” Pudding in a Mug

Bread pudding was a favorite food of mine growing up.  I just loved it.  I always poured maple syrup over it.  So, this recipe doesn’t actually have any bread in it, but the texture comes out just like bread pudding.  You can pour maple syrup over it, or just eat it plain, as I did.  It’s actually sweet enough without, but the maple syrup would turn it into a more decadent treat.  It all depends on how fancy you want to get with it.

Ingredients:

1/2 banana, mashed

3 Tbsp pumpkin puree

2 Tbsp almond flour

1 egg

1/16 tsp baking soda

Dash of cinnamon

Dash of nutmeg

Dash of ginger

Directions: Mix mashed banana, pumpkin puree, almond flour, and egg in a large mug or as I used, a glass measuring cup.  Add in the baking soda, cinnamon, nutmeg, and ginger.  Mix well.  Microwave for 3 minutes on high.  Allow it to cool slightly before eating.  Enjoy!
