Paleo Coconut Flour Carrot Pancakes

coconut carrot pancakesI’ve been enjoying my 21 DSD banana muffins for breakfast, but I ran out of almond butter.  I hate when that happens.  Then, I tried to make this awesome AIP/21 DSD cereal, but it wasn’t awesome.  Adapting my diet has left me having to play around more.  There’s a new learning curve, but at the same time, it helps me create new dishes, and it should also be great for reducing inflammation (I know I still have quite a bit from all of the time my digestive tract was being tore up from not knowing the proper way I needed to be eating) and balancing my hormones.  It will take longer than just 21 days to repair the inflammation, so hopefully I’ll form better habits as I go through this detox.  It’s a journey and I have come so far.  I take baby steps that I can live with, and adapt.  Then, I take more baby steps, and I just keep going.  So, when my cereal flopped, I didn’t let that stop me.  I made pancakes.  They happened to be very good pancakes!  Now, for 21 DSD purposes, I topped mine with 1/4 green apple chopped, and a drizzle of full-fat coconut milk.  I’m sure maple syrup or molasses would be delicious if you’re not doing a sugar detox.

Ingredients:

3 eggs

3 Tbsp coconut flour

1 carrot

1/4 tsp baking soda

Directions: Blend everything together in your high powered blender (you could possibly grate the carrot if you don’t have a high powered blender, though I have not tried that).  Scoop batter into a lightly oiled skillet, on medium heat, and make dollar-size pancakes (they flip easier, but you can make them bigger), and let them cook until golden brown, flip them and do the same on the other side.  Enjoy!
