Paleo Peach Pear Muffins

Peach Pear Muffins

I decided to start my birthday with some fresh from the oven muffins.  My peaches and pears were ripe and ready to be eaten, so that made this plan exceptionally appealing.  After all, warm muffins with peach and pear pieces in them sounded heavenly.  From there my creative brain went to town and the peach pear muffins became my heavenly breakfast, just as I’d hoped.  These are subtly sweet, with chopped up peach and pear pieces in them to add sweetness and amazing flavor.  A little butter or coconut butter spread on them is very tasty!

Ingredients:

1/2 cup tapioca flour

1/2 cup coconut flour

1/2 cup hazelnut flour

1 Tbsp coconut butter

5 eggs

1/4 cup applesauce

2 Tbsp full-fat coconut milk

1/4 cup coconut oil

1/2 cup water

1 tsp baking soda

1 Tbsp coconut sugar

1 tsp cinnamon

1/8 tsp ginger

1 peach

1 pear

Directions:  Preheat oven to 350′ and prepare muffin pan with liners.  In a medium-size mixing bowl, combine all 3 flours.  Add coconut sugar, baking soda, cinnamon, and ginger.  Add the coconut butter, eggs, applesauce, full-fat coconut milk, coconut oil, water, and vanilla.  Chop peach and pear into small pieces (about the size of an m&m).  It’s optional to peel them before chopping.  I left the peel on, as it has a lot of nutritional value.  Add the chopped peach and pear into the muffin batter.  Give it a stir and bake for 20 minutes.
