Paleo Pineapple Carrot Muffin Top Coookies

These are so yummy!  While all of my boys were eating them, the real cookie monster is the one in the picture on the left.  He keeps coming and sneaking them when I’m not looking.  Little stinker!  He does it with a huge smile on his face, too.  He doesn’t realize I see him every time!   I don’t mind.  I know they’re delicious and I know they’re full of nutrients for him.  I’m a proud mama!

Ingredients:

5 oz dried pineapple, unsulphured

1 cup carrots, chopped

1 egg

1 tsp baking soda

1/2 cup almond butter

1 tsp vanilla

1 Tbsp honey

1 Tbsp maple syrup

Directions: Preheat oven to 350′ and line a cookie sheet with parchment paper.  In a high-speed blender or food processer, combine pineapple, carrots, and egg.  You don’t need it pureed smooth.  The goal is like a slightly chunky cream.  Once you have that, scoop the mixture into a medium-size bowl.  Add 1 tsp baking soda, almond butter, vanilla, honey, and maple syrup.  Mix thoroughly.  Scoop batter by small spoonfuls onto cookie sheet.  Bake for 15 minutes.  Makes about 18 cookies.  Allow to cool before serving.  Enjoy!
