It’s day one for me on my 21 day sugar detox and I’m already learning things about my diet. For example, I’ve learned I really love sugar. It’s been a tough day of craving and not giving in. To deal with the cravings, I’m trying to eat a lot of really flavorful dishes. This skillet is one of the best I’ve ever had. Not only that, but with all of the brightly colored veggies, it’s also very appealing to look at.
Ingredients:
3/4 cup chopped mushrooms
1/4 cup chopped onion
3 mini sweet peppers, chopped
1 large tomato, chopped
1 Tbsp coconut oil
2 eggs
Dash of salt
Dash of pepper
Dash of oregano
Dash of sage
Directions: In a medium to large skillet, on medium heat, add coconut oil, mushrooms, onion, sweet peppers, and tomato. Allow it to cook until the veggies start to brown slightly. Add salt, pepper, oregano, and sage. Pour contents into a bowl (cereal-size). Fry eggs, and set them on top. Add additional salt and pepper if desired. Enjoy!
