REAL, FRUGAL, HEALTHY, and FUN!!!
I love waffles! There’s nothing like a home-cooked breakfast. Smelling those comforting breakfast smells first thing in the morning is such a pleasant way to start your day. I grew up eating cereal most days. It’s a quick go-to breakfast for most people. Unfortunately, many lack nutritional value, and very few varieties actually fill you up. My kids get cereal on vacation, but otherwise, I don’t buy cereal. I’m partial to real homemade breakfasts where I know what they are actually eating.
It’s summer, and I love tropical flavors. I can’t get enough pineapple and coconut. It gives a warm breakfast like waffles, a fun summery twist. Not to mention, it’s so delicious, I’d eat them year-round. No doubt, eating these during a blizzard would help your mind escape to the tropics.
1-1/2 cups almond flour
1 tsp baking soda
3 Tbsp coconut cream
1/4 cup honey
4-5 Tbsp pineapple juice
Directions: Plug in waffle iron and allow to warm up while you prepare waffle batter. Mix all ingredients in a medium mixing bowl with the exception of the oil spray. I added them in the order listed. Once batter is thoroughly mixed, lightly spray with oil. You can now begin making your waffles. Don’t panic if your first waffle doesn’t come out as well as you’d like. In all of my years of waffle making, I have yet to figure out how to make a good “first” waffle. I think my first waffle’s come out well only 2 or 3 times out of many, many times. After the first waffle, they all come out great. I suppose it’s a right of passage I have to go through each time. Also, I was able to make 6 waffles with this recipe.
Ok, so why have pina colada waffles, only to top them with regular syrup? No clue. I sure didn’t. I made a super, quick and easy pina colada syrup to go with them. Only 3 ingredients, but it takes these waffles to the next level!
1/2 cup maple syrup
1/2 cup pineapple juice
1/4 cup full-fat coconut milk
Directions: Mix all ingredients together and heat in the microwave for 2 minutes, or you can use the stove to heat it up.
I put a little butter on my waffles before adding the warm pina colada syrup. For a dairy-free version that would work very well with these waffles, use coconut butter before adding the warm syrup. Enjoy!
