Red, White, and Blue Chia Pudding – Coconut Berry

I love chia pudding, and I love getting festive.  To me, the 4th of July needs a dessert of strawberries, blueberries, and something white and creamy.  It’s red, white, and blue!  Not to mention, summery and refreshing.  I threw this together very quickly.  It’s the richest chia pudding I have ever made!

Chia Pudding Ingredients:

2 cups full fat coconut milk

1/3 cup chia seeds

1/4 cup raw, organic cane sugar or honey

Directions: Mix all pudding ingredients thoroughly and store in an airtight container in the refrigerator for at least 2 hours, preferably 6-12 hours.  I like to let mine set overnight.

Berry Mixture:

3/4 cup chopped strawberries

3/4 cup blueberries

Juice of 1 lime

1 Tbsp honey

Directions: Mix all ingredients together.  Use berry mixture to top chia pudding.  You can also layer it in a pretty dessert dish.  Keep separate until serving.
