Sausage, Spinach, Eggs 2 Go

This is a great meal prep recipe.  You can prep a bunch of these eggs 2 go things one day, and enjoy them as a quick and easy breakfast all week long.  The concept of making these has been around forever.  I kept mine pretty basic.  I encourage you to take this recipe and make it your own.  You can adjust the amounts, add different meats and veggies.  Or make them with no meat.  You can add a little cheese.  I don’t eat too much cheese because a lot of dairy takes it’s toll on me.  Play around and make it the way you like it.  I’m sharing my recipe as a place for you to start.

Ingredients:

8oz cooked turkey sausage

1 small handful of spinach

6 eggs

1Tbsp tapioca flour

1tsp baking soda

1tsp salt

1tsp pepper

1tsp dill

Directions: Preheat oven to 350′ and line muffin pan with muffin liners.  I spray my liners lightly with oil.  I find the liner comes off better, but it’s up to you.  Divide the cooked sausage and spinach amongst the liners. Beat eggs, flour, baking soda, salt, pepper, and dill until thoroughly mixed.  Pour egg mixture over sausage and spinach.  Bake about 12 minutes.  Enjoy.  You can also store these in an airtight container in the fridge and heat them up for about 45 seconds for 1, or 1 minute for 2 in the microwave and eat them all week long.

Having a healthy  breakfast already made, makes it so much easier to get your day started right. You’re less likely to skip breakfast, grab a doughnut, or settle for colorful sugar in a box, known as cereal.  These are full of protein, healthy omega’s, and have almost no sugar (odds are if you use sausage, there is a minimal amount).  Just another great way to stay on track!

    These are better to have on hand than those quick frozen breakfasts from a box that are high in sodium and full of preservatives.
