If you are like me, chocolate is the magical treat that eases stress after a rough day.  Or even a day that was just really busy and tiring.  After prepping for a trip all day, I needed some relief.  Also, though, because I’m prepping for a trip, the only treats I’ve made are for my trip.  Here I was craving a chocolaty treat and not sure I’d be able to make one.  I stared at my pantry for a good minute.  I had dates, cashews, and chocolate.  I had no eggs to spare, no coconut milk, no almond or coconut flour, and no real plan.  Then, it hit me.  Why make it complicated?!  Why not use those 3 ingredients and make cute, easy, wholesome chocolates.  Almost like a turtle knock-off.  I don’t know, to me, dates are nature’s caramel, so to me, dates, cashews, and chocolate are like turtles.  A little less gooey, but the healthiest chocolate turtle you can eat.

3 Ingredients:

1 tsp chopped dates per chocolate turtle

5 cashew halves per chocolate turtle

1 tsp dark chocolate, melted, per chocolate turtle

3 Steps:

1. Place dates and cashews in individual cupcake liners or any small containers (ice cube tray or similar, I used cupcake liners.

2. Spoon melted chocolate over dates and cashews.

3. Set in fridge or freezer til firm

There are definitely fancier recipes for chocolates out there, but this is great for when you are in a pinch.  It is quick and easy.
