REAL, FRUGAL, HEALTHY, and FUN!!!
I thought twice about posting this recipe because I know most people prefer sweet, milky chocolate. I’m a dark chocolate kind of girl. This is that rich, dark, gourmet, chocolatey treat. It’s only mildly sweet. I come from a family of dark chocolate-lovers. To me, this is exquisite and amazing. The individual portions, per the cupcake liners, make it feel special. It’s like a luxury treat. The chocolate is fudgy. It’s not solid like a candy bar, nor melting everywhere as soon as you touch it like some freezer fudge recipes. Now, I’m going to say this again, this is dark chocolate. It’s more bitter than the candy bars you see at the check stand. The health benefits are many.
1/4 cup molasses
1 Tbsp almond flour
2 Tbsp coconut oil
1/2 cup cocoa
1/4 cup chopped dates
2 Tbsp pepitas
2 Tbsp sunflower seeds
1 Tbsp chia seeds
Directions: Place 8 cupcake liners in muffin pan. Mix molasses, almond flour, melted coconut oil, and cocoa. The mixture will be thick like brownie batter. Divide the chocolatey mixture up among the 8 cupcake liners. It wont just melt smooth. Put a little oil on your hands so you can press the chocolate down smoothly. Sprinkle with dates, pepitas, sunflower seeds, and chia. Pat the toppings down into the chocolate. Refrigerate for at least one hour before serving.
