Pina Colada Honey Chews

These delicious chews are so yummy!

These chews are awesome!  You’d never guess they’re so nutritious.  The texture reminds me of an ‘Airhead’ from when I was a kid.  The favor is like honey butter pina colada.  I had to watch the boys with them.  They wanted to eat the whole batch in one shot!  Ok, so not only are these super yummy, but they’re super easy, too!


8oz unsweetened shredded coconut

6 oz dried pineapple

1 tsp vanilla

2 tsp honey

Directions: Pour coconut into high powered blender. Blend until it turns into coconut butter.  Yes, this will happen.  It takes a minute.  First it becomes a very fine flour.  Just keep it going.  After a little while, the oils are released and it forms a creamy butter.  At this point, add the pineapple.  Blend until creamy.  It’s ok if you see the oil separating.  Add vanilla and honey.  Continue blending until thoroughly mixed. At this point, you should have a creamy ball, and possibly a little oil floating separately.  Take the creamy ball and set it on a dish towel to absorb the oil.  You may want to pat the ball a bit with the towel.  Set the creamy ball between 2 pieces of parchment paper and roll it out.  This may expel more oil, just grab a towel to soak it up.  I bet you didn’t realize how much oil was in that shredded coconut!  Once you have it rolled out (not to thin), you can cut it into squares with a pizza cutter.  Place the squares on a plate in the fridge (don’t stack them) for one hour to get a little chilled.  After an hour you can put them all in an airtight container.  Keep stored in the refrigerator.  Enjoy!

Nutritional Bang In Every Bite

This is literally candy with a nutritional punch!  The coconut supplies protein, fiber, iron, zinc, and medium-chain, saturated fatty acids (great for energy and fat burning).  The pineapple provides manganese, calcium, magnesium, phosphorous, potassium, vitamin C, and folate.  Honey is actually a great pre workout.  It helps with energy and endurance.  Honey is also a powerful immune system booster.  It can help fight the common cold, and even helps prevent cancer!  That is candy with nutritional bang in  every bite!!!

      Thank you! Definitely. I created this recipe playing around, not entirely sure what the outcome would be. I have to admit, I am more than happy with the outcome! They’re amazing.
