Cinnamon Date Crackers

I’m definitely on a cracker making kick this week.  There’s a couple of reasons.  My husbands away (military), so my boys and I have been more into lots of snacks rather than big meals.  Crackers are a great, versatile, portable snack.  Another thing I love is how easy it is to change up the recipe and make an entirely different flavor of cracker.  So, I made my Savory Pumpkin Crackers just a couple of days ago.  Well, this recipe is basically the same, with just a few small changes.  That brings me back to my reasons for making crackers so much this week.  I happen to have a large bag of almond flour and a ton of eggs, from there, I just add flavor!  This crackers are mildly sweet.  They remind me a little bit of a graham cracker or a tea cookie.


2 cups almond flour

1 egg

1/2 cup raw date caramel

1Tbsp maple syrup

1 tsp cinnamon

Directions: Preheat oven to 275′ and prepare a cookie sheet, either by greasing it, or with parchment paper.  I greased mine.  Mix up all of the ingredients.  The order you add them doesn’t really matter.  I added mine in the order I have them listed.  Once the dough is mixed well, dump it onto your prepared pan.  Use your fingers to press the dough and spread it evenly.  I put oil on my hands so the dough would not stick.  You’ll want to spread it til it is 1/8″-1/4″ thick.  Bake for about 35 minutes, turn off oven, and leave in an additional 25 minutes.  You’ll have to pay close attention because the exact thickness can alter the cooking time a bit.
