REAL, FRUGAL, HEALTHY, and FUN!!!
Living in El Paso, avocadoes are so plentiful! They’re also a little cheaper here. Wahoo! Anyhow, I love them! They are so creamy and delicious. Not to mention, they are a superfood. They are an incredibly healthy fat. They’re great for your eyes, skin, heart immunity, and help you absorb other nutrients. This recipe combines avocadoes with another healthy fat. Yep, lots of healthy fats here. I combined avocadoes with full-fat coconut milk to make this creamy, dairy-free mint chocolate chip ice cream. Coconut milk is great for your blood, bones, muscles, nerves, immunity, and joints. Check this out:
3 frozen avocadoes (peel them before you freeze them, or you’ll never get them peeled)
3 Tbsp full-fat coconut milk
3 Tbsp honey – adjust to your taste
1/2 tsp vanilla
1/2 tsp peppermint
3/4 cup chocolate chips
Directions: Puree avocadoes, coconut milk, honey, vanilla, and peppermint in your high powered blender until completely smooth. Once creamy and smooth, empty contents into a mixing bowl. Stir in chocolate chips. Place in freezer for 15 minutes before serving. If you have extra, I recommend using it to make popsicles.
