Gingerbread Sundae – Creamy Banana Ice Cream With Carmelized Salted & Gingered Molasses

This is amazing and delicious!  On top of it’s yum factor, check this out: Bananas are a source of potassium, molasses are a source of magnesium, and salt is a source of sodium.  Boom!  There are your electrolytes!

Ingredients:

1-1/2 frozen bananas

2 Tbsp coconut cream

1 Tbsp butter

1 Tbsp molasses

1/8 tsp salt

Dash of cinnamon

Dash of nutmeg

Dash of ginger

Directions: Combine molasses and butter in a saucepan on medium heat.  Add salt, cinnamon, nutmeg, and ginger.  Bring to a boil for 1-1/2 minutes.  Turn off heat.  While it’s cooling, puree frozen bananas and coconut cream in a blender until smooth.  Serve ice cream topped with molasses topping.  As the topping cools on top of the ice cream it caramelizes into a sweet and salty gingerbread taffy.  Enjoy!
