Sweet Potato Frozen Yogurt

Holy moly! Yum!

I had a craving for something sweet.  I’m kind of trying to cut back on my sweets this week, so my fridge and pantry aren’t exactly stocked for my usual treats.  I did however stock up on sweet potatoes, dates (the only “sweetener” I bought this week), and Greek yogurt.  I knew I could make sweet potato frozen yogurt with that!  Let me just tell you, this recipe makes the most delicious sweet potato frozen yogurt, ever!  You’d never believe how healthy it is, or how simple.  Only 3 ingredients!

Ingredients:

1 cup cooked, frozen, cubed, sweet potato (hard to blend if you don’t cube it)

1/4 cup plain Greek yogurt

1/2 cup dates

Directions: Throw everything in your high speed blender and blend until smooth.  That is all!  Scoop into ice cream cups or small bowls and enjoy immediately.

Sweet potatoes have a lot of nutritional value, including  vitamin B6, C, D, iron, magnesium, potassium, as well as carotenoids.  Greek yogurt contains protein and probiotics.  Dates contain fiber, antioxidants, magnesium, and potassium.
