These were fun! Sometimes, I like to mix different things together and see what the outcome will be. My mom got me these adorable Lego molds for my birthday, and I’ve been dying to use them. I decided it was time to play and see what I could create. Oddly, enough, I’ve always wanted to create an easy raw cookie, and lucky for me, that’s what I made. My 4 year-old loves these! He sneaks into the refrigerator and grabs them when he thinks no one is looking. Ha ha! If only he knew, mama sees everything!
Ingredients:
7 oz shredded, unsweetened coconut
4 oz dried strawberries
1 Tbsp honey
Directions: Blend all ingredients in a blender until it’s somewhat of a creamy, pasty, mixture. Basically, you want it smooth. It takes a while. First it becomes a crumbly, mealy mixture. Then, it becomes a fine powder. Just keep it going. Eventually, the coconut releases it’s oils, and the mixture becomes kind of creamy. Let it blend another minute or two to make sure it’s thoroughly blended. Scoop mixture into silicone molds and refrigerate. Let them set for about 4 hours before popping out of silicone molds. Store in an airtight container in the refrigerator.
