REAL, FRUGAL, HEALTHY, and FUN!!!
This week has been one of those tight budget weeks. All of my meals were thoroughly thought through. I didn’t get all of the “fun” things to make yummy treats. So, last night when my husband asked if we had anything sweet, I thought, Nooooo! I thought, Oh man! What can I make?! Well, I had some banana flour that I had picked up on my vacation last week. I also had about 1/4 of a brick of dates. I use the term brick quite literally. I bought these dates in Canada that were smashed together into the shape of a brick. They’re so packed, they are actually heavy! I bought a bunch of apples this week, as well as some butter. I thought to myself, I can do this. I can work with this. And I did! This apple cobbler is delicious!
4 small apples, chopped
1 lb dates
1 cup water
1/2 cup butter, melted
3 Tbsp banana flour or your gluten free flour of choice
1 Tbsp maple syrup
Directions: Soak dates in water for about 2 hours or more. After 2 hours, puree the dates and the water, creating a delicious caramel. Preheat oven to 350′ and grease an 8″x8″ square pan. Place chopped apples in the bottom of the pan. Pour caramel puree over the chopped apples. In a separate bowl mix melted butter, flour, and maple syrup. Plop spoonfuls of the batter over the caramel. Bake for 30 minutes.
