REAL, FRUGAL, HEALTHY, and FUN!!!
Tonight, at the last minute, the family decided they were going to have a movie night with Duncan Hines cupcakes. Well, I didn’t want to eat Duncan Hines cupcakes, but I also didn’t want to miss out on the fun. I decided to make a very small batch of quick and easy cupcakes so that I, too, could join in on all of the fun. Now, the step where you soak the dates and cashews might not seem quick, but if you follow my recipes, it’s in so many of them. I almost always have cashews and dates already soaking.
1/4 cup chopped dates
1/4 cup cashews
1 Tbsp coconut cream
1/4 cup water
1/2 tsp baking soda
Directions: Soak dates and cashews in coconut cream and water in an airtight container for at least an hour. Preheat oven to 350′ and prepare cupcake pan. Line 3 spots with cupcake liners and spritz with oil. Blend dates, cashews, coconut cream, and water in a blender until smooth. Add baking soda and egg. Pour batter into cupcake pan and bake for 21 minutes. Let cool.
Chocolate Ganache Ingredients:
1-1/2 Tbsp cocoa
2 Tbsp molasses
Directions: Mash ingredients thoroughly with a fork to blend. Spread over 3 cupcakes. Garnish with unsweetened coconut or berries if you wish.
