REAL, FRUGAL, HEALTHY, and FUN!!!
There has not been any chocolate in the house for a few days. It was rough. I was really tempted to run to the store, but I held off. That is, until today. I had to restock the pantry and refrigerator, and I definitely grabbed some cocoa and some Enjoy Life Chocolate Chips. Oh, and I made these cookies as soon as I got home from the store! There was actually a whole pan, but they were so good, I had to take a picture of the last three.
1 ripe banana
1 to 2 Tbsp maple syrup
1 Tbsp baking soda
2 Tbsp cocoa
1-1/2 cups unsweetened shredded coconut
1/3 cup chocolate chips
Directions: Preheat oven to 350′ and line cookie sheet with parchment paper. In a medium mixing bowl, mash banana. Add egg, maple syrup, baking soda, and cocoa. Mix well. Add in shredded coconut and mix well. Add in chocolate chips. Form batter into cookies on cookie sheet. They don’t spread much, so form them to the shape you want them. Also, it may feel like the batter doesn’t stick together well. I used my hand and kind of squished it into the shape I wanted. Bake for 10 minutes.
