REAL, FRUGAL, HEALTHY, and FUN!!!
I’m happy to say, I’ve created gooey, chocolatey, fudgy brownies. The kind that make a bad day good. The kind that taste sinful, but with this recipe, they actually are not.
I was running short on snack foods, again. I threw some cashews, dates, and unsweetened coconut into a container with some coconut water and let it soak together for a few hours. I wasn’t really sure where I was going with it, but I figured it would make a great base for something.
In the evening, I pulled it out and pureed it in the blender. I just started adding things and the next thing you know I had brownies. I had an appointment right after dinner. So, I didn’t get to have any right away. My husband dropped me off and as soon as they got back to the house they dug in. When he picked me up from my appointment, I asked how it was. He said it was really good. He told me not to worry because they’d saved me a piece. I got home and saw it, and truly was devoured. What you see in the picture is all they left me.
1 cup cashews
1/4 cup unsweetened shredded coconut
1/4 cup dates
1 cup coconut water
1/2 cup cocoa
1 tsp baking soda
1/4 cup chocolate chips
Directions: Place cashews, shredded coconut, and dates in a container with the coconut water. Let soak 2-3 hours. Preheat oven to 350′ and grease 9″x9″ square pan, or as I used, a 9″ round pan. Puree contents of the container (cashews, coconut dates, and coconut water). Add egg, cocoa, and baking soda. Mix thoroughly. Add in chocolate chips. Bake for 30 minutes. Enjoy.
