REAL, FRUGAL, HEALTHY, and FUN!!!
It’s getting to the end of the grocery week. The fridge and pantry are becoming bare. I try to work with what I have rather than go to the store early. Stretching your grocery week is a great way to save money, but that means you can’t make quick trips to the store either. You make do or do without. You’d be surprised just how long you can actually make do. Well, with a fairly cleared out fridge and pantry, I was up for a challenge today. See, Mondays, after I pick up the boys from school, they have 10 minutes to grab a snack and change. After that, we’re gone all afternoon. Between Sam’s karate and Ben’s gymnastics, we don’t get home until 9 o’clock at night. We have to eat while we’re out, and I don’t stop to grab food. I pack food. One of the many snacks I packed today was these Paleo Busy Day Cookies. I worked with what I had, and the result was on point; a yummy, hearty cookie, full of healthy fats, protein and carbs. A wonderful on-the-go snack!
1 cup almond flour
1/2 cup maple syrup
1 tsp baking soda
1/2 tsp vanilla
1/2 tsp ginger
1 cup pepitas (pumpkin seeds)
1 cup sunflower seeds
1/4 cup chia seeds
Directions: Preheat oven to 350′ and line cookie sheet with parchment paper. In a large mixing bowl, mix almond flour, maple syrup, egg, baking soda, vanilla, and ginger. Once thoroughly mixed, add pepitas, sunflower seeds, and chia seeds. Plop in tablespoonfuls onto cookie sheet. Bake 15 minutes.
I wasn’t sure if I’d be the only one eating these because they are a heartier cookie, but my kids loved them. They have been great for running errands. We have a major road trip coming up, and they will definitely be part of my on-the-road menu.
