REAL, FRUGAL, HEALTHY, and FUN!!!
With summer around the corner, I’m playing around with different potluck ideas. It’s always good to have a delicious dish you can bring to a BBQ and/or potluck. There is no way to describe this better than chocolate chip cookie cake. It’s got all of the flavor of a chocolate chip cookie, yet moist and fluffy (not mushy like some paleo cakes) like a cake. No one would ever know you were serving them something that actually packed a ton of nutritional value! In fact, this cake is only sweetened by dates, but you would never know it!
1 cup cashews
1 cup dates
1 can full fat coconut milk
12 oz chunky almond butter (the full 12 oz jar I had)
2 tsp baking soda
1-1/2 cups dark chocolate chips
Directions: Soak cashews and dates in full fat coconut milk, in an airtight container. Refrigerate for at least 1 hour. Preheat oven to 350′ and grease a 9″x13″ pan. Pour contents of the airtight container (cashews, dates, and coconut milk) into blender. Puree until smooth (currently my Vitamix is being repaired, and a regular blender worked just fine). Pour puree into a large mixing bowl. Add eggs, almond butter, and baking soda. Mix thoroughly. Stir in chocolate chips. Pour into greased pan. Bake 30-35 minutes.
I kid you not, nobody will know how nutritionally powerful this dessert is. The nuts provide healthy fats and fiber. The dates are full of fiber, iron, and have been shown to help with digestion. Eggs contain healthy fats and protein. Dark chocolate is great for antioxidants and has been shown to help with depression. What a great dish to bring to your next potluck or BBQ!
