I can’t tell you how fun this was. Forming the pretzels with the shortbread dough is like getting in touch with your inner-child and getting back to the play-do playing days! So much fun. Clearly, I could use a little artistic work, but I think they look decent. I had a blast rolling out bits of dough and shaping them. Not to mention, they’re so much fun to it! I mean, I can’t remember the last time I found chocolate covered pretzels I could eat.
Ingredients:
3/4 cup tapioca flour
1 egg
1/4 cup coconut oil
1/8 tsp baking soda
1 Tbsp coconut flour
1 Tbsp butter, softened (preferably grass-fed)
1 tsp salt
1/2 cup chocolate chips (I used Enjoy Life)
1 Tbsp coconut oil
Directions: Preheat oven to 350′ and prepare cookie sheet with a little oil and or parchment paper. Combine tapioca flour, egg, coconut oil and baking soda. Gradually add in the coconut flour. Mix well. You may need to use your hands. Once it’s thoroughly mixed, begin grabbing bits of dough. Grab just a bit more than a tablespoonful. Roll it out til it’s fairly thin, and shape it into a picture. I googled a picture of a pretzel so I had a visual for this. Continue forming pretzels until all of your dough is used. Melt better. Spread on pretzels. I used an unused crafting paintbrush. Work with what you have. You can always drizzle it with a spoon if you need to. Sprinkle pretzels with a bit of salt. Bake for 12 minutes. Allow the pretzels to cool. Melt chocolate chips and coconut oil together. Dip the pretzels in the chocolate and set them in the fridge to cool and the chocolate to harden. Enjoy! Makes about 15 chocolate covered shortbread pretzels.
