Paleo Chocolate Monkey Rolls

Today was the first day of school for the boys.  It’s the first year all 3 of my boys are in school, though my little guy is only half days this year.  Since I had a bit of time at home on my own, I wanted to make them a special treat for after school.  Mondays are long and exhausting for all of us.  After a busy day at school, I walk them home.  It’s just over a mile, and all of it is slightly inclined.  Once we’re home, they have just a few minutes to grab a snack and change.  Then we leave to take Ben to gymnastics and Sam to karate.  Adam and I stay with Sam, and Adam uses the time to do homework or play games.  Adam, Sam, and I arrive home just a little after 6 (my husband gets Ben at 8:30).  Needless to say, they need snacks that will sustain them.

I decided to make a fun little roll-up.  Something small and super kid friendly.  I came up with these chocolate monkey rolls.  Now, they may not look beautiful, but let me tell you they are yummy!  The boys said they are the best after school treat ever!  In fact, they think I should make them daily!  They’re like a banana crepe/tortilla/wrap with a delicious chocolate spread, all rolled up into an awesome finger food!

Banana Roll Ingredients:

3 bananas

1 egg

1 tsp baking soda

1 cup tapioca flour

Directions:  Preheat oven to 350′ and line a cookie sheet with foil or parchment paper.  Whichever you use, make sure to spray it with oil so you can easily remove the roll without ripping it.  Puree all ingredients in a blender.  Pour into pan.  Bake for 18 minutes.  Allow it to cool, and flip it onto a dish towel.  If parchment paper or foil sticks, peel it off very gently and slowly.

Chocolate Spread Ingredients:

1 banana, mashed

1/2 cup almond butter

1/2 cup chocolate chips (I used Enjoy Life)

Directions:  Combine ingredients and heat to melt everything together.  I used the microwave for 2 minutes, stirring every 30 seconds.  You could also use the stove top.  Once it’s all melted and mixed, spread the chocolaty mixture over the roll/wrap.  Roll it long ways (starting at one long side, roll to the other long side).  Cut into 3″ Chocolate Monkey Rolls.  You can serve them right away, or you can store in the fridge for later.
