REAL, FRUGAL, HEALTHY, and FUN!!!
Mondays are busy days. Ben has gymnastics and Sam has karate. The boys wanted an on-the-go snack. I’ve been on an “I don’t want chocolate, but bring on the maple syrup” kick these past few days. It happens. I decided to make maple almond butter cookies. If you’ve never baked with almond butter, you should give it a try. It is so forgiving and the results are almost always perfect. I’ve used it in brownies, bars, cookies, fudge, and even sauces. These cookies were another almond butter success story!
3/4 cup almond butter (I used chunky)
1/4 cup maple syrup
1 tsp baking soda
2 tsp coconut flour
2 tsp almond flour
Directions: Preheat oven to 350′ and prepare cookie sheet either with grease or parchment paper. Literally, mix all of the ingredients together. I added mine in the order listed, mixing after each addition. Place cookie dough by the Tbsp, about 2″ apart. Bake for about 9 minutes. Enjoy!
