Looking around my kitchen, I noticed some raisins and some apples. Naturally, I thought, why not make baked apples? I mean, they were both literally next to each other on the counter. It was like someone was sending me a message to make baked apples. So, I did. It was so yummy. I don’t make my baked apples quite like traditional baked apples. Mine are creamy and sweet with a vanilla, maple, almond butter cream filling. Of course, you have to have raisins in there, as well.
Ingredients:
4 apples, peeled and cored
1/4 cup full-fat coconut milk
4 Tbsp almond butter
1 Tbsp vanilla extract
2 Tbsp maple syrup, divided
1/4 cup raisins
1/4 cup water
Directions: Preheat oven to 350′ and place 4 peeled and cored apples in a pan. In a small bowl, mix together coconut milk, almond butter, vanilla, 1 Tbsp maple syrup, and raisins. Scoop mixture into apple cores. It may overflow slightly. Pour the water in the base of the pan around the apples. Drizzle 1 Tbsp of maple syrup over the apples. Bake for 35 to 40 minutes. Enjoy!
By full fat coconut milk, you mean the stuff in the can?
