REAL, FRUGAL, HEALTHY, and FUN!!!
I like dessert. It doesn’t have to be overly sweet. In fact, most of the time, I prefer something more mild. I bought a bunch of peaches this week. I decided to make a peach cobbler. I got a little fancy and made it a la mode. Those extra things are fun ways to make an ordinary day feel special from time to time.
1 peach, chopped into bit-size pieces (peeling is optional)
1 Tbsp coconut flour
1 Tbsp honey
1/8 tsp baking soda
1/8 tsp cinnamon
1/2 frozen banana (optional for “a la mode” version)
Place chopped peach in a large mug or a measuring cup. In a separate bowl, mix coconut flour, egg, honey, baking soda, and cinnamon. Pour batter over chopped peach. Microwave for 3 minutes. If you want to serve it a la mode, I pureed 1/2 frozen banana and scooped it on top. It was delicious!
