REAL, FRUGAL, HEALTHY, and FUN!!!
I am ready for tomorrow! I love the feeling of being ready! The boys are always starving when they get home from school. I don’t know if it’s the fact that they’ve been working hard at school, or if it’s the walk home. It could be the combination. Either way, they are like wild animals when they get home, ready to devour a snack. I always hear teenage boys eat a lot. I think little boys eat a lot. I’m not sure how I’ll handle their teenage appetites. Anyway, some kids grab some packaged treats when they get home. I don’t buy that stuff. I feel better about serving my kids food that was made by me, with real, nutritious ingredients. I should notate real quick, as I always wonder what my readers must think, that we also devour fruit and vegetables. We just happen to love a treat, as well. Who doesn’t love a fresh cookie?! Oh, and I just have to say, Chips A’Hoy? What is that junk? It doesn’t resemble freshness in any sort of way! It looks like something that was made when dinosaurs roamed the Earth and was saved til now to be eaten. I don’t get the appeal. Anyway, back to the delicious cookie recipe I want to share with you…
1 cup tapioca flour
1/2 cup coconut flour
1 Tbsp butter, softened (grass fed is best)
1/4 cup maple syrup
1/4 cup honey
1 tsp vanilla
1/4 tsp baking soda
1/2 cup chocolate chips
Directions: Preheat oven to 350′ and prepare cookie sheet with grease and/or parchment paper. Combine tapioca flour and coconut flour. Add eggs, softened butter, maple syrup, honey, and baking soda. Mix well. Add chocolate chips. Drop cookie batter by the tablespoonful onto cookie sheet, leaving about 2″ in between. Bake for 12 minutes.
