Triple Nut Pound Cake

My birthday is in 2 days!  That means birthday cake time!  I like doing double layer cakes for birthdays.  I think that the two layers, with frosting in between and all around makes it feel a little more special  Unfortunately, that also means that the cake needs to bake very evenly in both pans, and it has to come out of the pan perfectly.  It also has to be strong enough that the bottom layer does not cave in.  I have to be honest, from the moment I started mixing the ingredients, until the moment both cakes came out of the pan perfectly, I was very nervous.  When the cakes were completely cooled and I worked them out the pan, I was so excited.  I mean, these cakes came out perfectly!  Oh, and before making them, I did use batter to make 2 cupcakes so that I could sample them before the big day.  The flavor is like a soft, vanilla nut.  It’s very pleasant and would go well with a vanilla, chocolate or caramel topping/frosting.  You could even serve it with fresh berries and coconut cream.  Oh, and by the way, the baking time for cupcakes is 20 minutes.  This recipe makes 2 9″x9″ rounds.  If you just need one, it can be halved pretty easily.


1/2 cup coconut butter

1/2 cup almond butter

3 cups coconut sugar

6 eggs

1 cup hazelnut flour

1/2 cup coconut flour

3/4 cup coconut milk

2 cups tapioca flour

1 tsp baking soda

1/2 cup unsweetened applesauce

1 tsp vanilla extract

1 tsp almond extract

Directions: Preheat oven to 350′ and grease 2 9″x9″ round pans.  In a large mixing bowl, cream together the coconut butter, almond butter, and coconut sugar.  Add 1 egg at a team, creaming mixture as you go.  Add hazelnut flour slowly, continuing to mix thoroughly.  Add coconut flour and mix well.  Add the coconut milk and mix some more.  Add the tapioca flour slowly, continuing to mix.  Add baking soda, applesauce, vanilla and almond extract.  Mix thoroughly.  Divide batter between 2 pans.  Bake for 35 minutes.  Allow to cool completely before removing from pan.  You can frost it, drizzle a topping over it, or eat it plain.

    Looks wonderful. Is the coconut milk the canned kind or the carton, shelf stable kind?

      I didn’t use the full-fat kind in the can, although it’d be just fine. I used milk, like the carton kind. You can also use homemade. Carton or homemade, like the kind you’d drink from a glass.
