REAL, FRUGAL, HEALTHY, and FUN!!!
My 4 year-old informed me that I did not have enough snack food in the house. I went to the pantry and started pulling things out. I had a ton of fun playing in the kitchen creating these cookies. I wanted to make something different. Something a little summery. With ingredients like pineapple, coconut, and lime juice, these cookies will take your taste buds to the tropics no matter what time of year it is.
1 cup cashews
1 cup dried unsweetened pineapple
1 cup full-fat coconut milk
3/4 cup coconut flour
1 tsp baking soda
Juice of 1 lime
1/2 cup honey
1 Tbsp gelatin
3/4 cup unsweetened shredded coconut
Directions: Soak cashews, dried pineapple, and coconut milk for at least an hour. Preheat oven to 350′ and line cookie sheet with parchment paper. Puree cashews, dried pineapple, and coconut milk. Add egg, coconut flour, baking soda, lime juice, honey, and gelatin. Mix thoroughly. Add in shredded coconut. Place by the tablespoonfuls onto cookie sheet. Press down with a fork to form cookie, as they do not flatten and spread while cooking. Bake for 15 minutes. Enjoy.
