Crisp Salad With Sweet Banana Avocado Dressing

It’s the best time of year to buy fresh fruits and veggies.  They can be so pretty and so flavorful.  I like mixing together crazy combinations and seeing how the different fruits and vegetables work together.  The dressing on this one tastes sinfully delicious!

Salad ingredients:

A good handful of dark, leafy greens (I used a kale blend)

1/4 cup chopped cactus (nopal)

1/4 cup chopped red onion

1/4 cup slivered carrots

1/2 cup sliced cucumber

1 Tbsp sunflower seeds

Directions: Just toss it all together

Dressing Ingredients:

1 Tbsp balsamic vinegar

1 avocado

1 banana

1/2 tsp salt

Directions: Blend dressing ingredients together in a blender until smooth.  Drizzle over salad.  Enjoy.

You could easily pair this salad with tuna or chicken if you wanted to add meat to it.  I’m really trying to increase my veggies and eat a little less meat lately.  It was absolutely delicious and satisfying all by itself.
