REAL, FRUGAL, HEALTHY, and FUN!!!
I can’t help but make salads this time of year. It’s the best dish when it’s hot out, and the produce is so fresh this time of year. I never cared for traditional garden salad with iceburg lettuce, tomato, cucumber and ranch dressing. I like my salads to have some creative pizazz! I like my salads to excite my taste buds. I like salads that are a little unexpected, with a melody of delicious flavors that work together in perfect harmony.
I cam up with this salad when my husband was coming home for lunch. I wanted to sit down together and eat something nice. I grilled some steaks to eat with the salad. It was a lovely meal. The minty vinaigrette works wonders to cool you down after being out in the heat.
1 large handful of butter lettuce
1 cucumber, thinly sliced
6 strawberries, thinly sliced
1/2 cup macadamia nuts
1/2 cup chopped dates
Directions: Toss everything together!
Maple Mint Vinaigrette:
1/4 cup avocado oil
1 Tbsp balsamic vinegar
2 Tbsp Maple Syrup
1/2 tsp salt
1 sprig of fresh mint
Directions: Blend all ingredients in the blender until smooth.
Pour the blended vinaigrette over the salad and enjoy. It is absolutely delicious, fresh and flavorful!
