Paleo Creamy Beef And Mushroom Zoodles

beef and mushroomI must say, it is a great day when, while doing a 21 day sugar detox, you actually create a dish you love and want to make again and again.  Now, if you don’t love mushrooms, this will probably not be your thing.  However, if like me, you love them, well, you will love this dish.  It is creamy, beefy, mushroomy, and zoodly.  Ha! Zoodly!  Yep, you will love it!


1/2 lb ground beef

8 mushrooms, sliced

4 Tbsp full-fat coconut milk

1/8 tsp salt

1/8 tsp black pepper

1/8 tsp sage

2 zucchini’s, zoodled

Directions: In a large saucepan, brown your ground beef on medium heat.  When it’s browned, or nearly browned, add in your mushrooms.  Stir to keep from burning the mushrooms.  Once the mushrooms start to brown slightly, add in th coconut milk, salt, pepper, and sage.  Turn heat to low and let simmer for about 5 minutes, stirring occasionally.  Turn off heat and add in zoodles.  Allow to sit in the hot saucepan for a few minutes, but not long enough to cook the zoodles and make them soggy, just enough to warm them.  Enjoy!
