REAL, FRUGAL, HEALTHY, and FUN!!!
I like introducing my family to new vegetables. Obviously rutabagas are not new, but they’re newer to my family. I’ve mixed chopped rutabagas into soups and that went over well. I wanted to try a dish of straight rutabaga. New vegetables can be hard to serve to people for the first time. They all have their own unique taste and texture. Because fries are such a classic, well-loved dish by most, I figured I’d use that approach. Now, just because these are fries, don’t compare them to potatoes. They are a different texture than potato fries. The texture is different, but it is good! I decided to make a seasoning blend for these fries. The seasoning blend is out of this world! It was so good, I intend to try it on chicken next! Maybe other things, too.
2 Tbsp olive oil
2 Tbsp unsweetened coconut chips (Wal-Mart actually carries organic of these)
1/2 tsp chili powder
1 Tbsp onion powder
1/2 tsp turmeric
1/2 tsp tarragon
1/2 tsp salt
3 bay leaves
Directions: Preheat oven to 400′ and lightly grease 9″x13″ baking pan. Peel and cut your rutabaga into fries. In a bowl or bag, toss the rutabaga fries around in the olive oil. In your blender, blend together coconut chips, chili, onion powder, turmeric, tarragon, salt, and bay leaves. Run blender until seasoning mix is a thoroughly blended, fine powder. Pour seasoning mixture over rutabaga fries. Toss the rutabaga fries around to coat them evenly with the seasoning. Spread the rutabaga fries around in baking pan. Sprits lightly with spray oil. Bake for 30 minutes, removing to stir/flip/toss every 10 minutes for even cooking. Enjoy!
