Paleo Single-Serve Italian Anti-Pasta Salad

This is such a quick, yet legit tasting “pasta” salad.  We’ve been pretty veggie crazy in my house this week.  My husband is trying to lose weight and my boys and I agreed to be supportive.  I came up with this salad, and it is so yummy!  The zoodles give it the illusion of being a pasta salad, not just in looks, but even as you eat it.  You really feel like you’re eating and Italian pasta salad!

Italian Anti-Pasta Ingredients:

1 zucchini, zoodled

3 small sweet peppers, sliced (I used 1 red, 1 yellow, and 1 orange)

1 Roma tomato, chopped

1/4 cucumber sliced

1 Tbsp slivered almonds

Directions:  Place zoodles in a salad bowl.  Top with sliced sweet peppers, chopped Roma tomato, and sliced cucumber.  Sprinkle with slivered almonds.

Italian Dressing Directions:

2 Tbsp olive oil

1 Tbsp balsamic vinegar

1/8 tsp chopped garlic

1/8 tsp onion powder

Pinch of salt*

Pinch of black pepper*

Pinch of oregano*

*my pinch is approximately 1/16 tsp*

Directions:  Mix all ingredients together in a small glass.  Mix thoroughly.  Pour over salad.  Toss lightly.  Enjoy.
