Paleo Sweet and Spicy Egg Zoodle Salad

It’s the middle of summer, and our AC is a poor excuse of a cooling system.  It’s hot inside and out.  It makes a lot of hot food unappealing.  I came up with this salad completely unexpectedly.  I just kept adding things, and it just kept getting better.  There’s sweet, crunchy, juicy, tangy, and spicy, all brought together beneath a fried egg.  It works!  It’s refreshing, exhilarating, and delicious!


1 zucchini, zoodled

3 small sweet peppers, sliced

1/4 cup chopped pineapple

2 eggs



2 Tbsp salsa (I used Newman’s Own Pineapple Salsa)

Directions: Place zucchini zoodles on a salad plate.  Top with sweet pepper slices and pineapple chunks.  Fry 2 eggs in a skillet.  Sprinkle the eggs with salt and pepper.  Place fried eggs atop the zoodles, peppers, and pineapple chunks.  Top the eggs with 2 Tbsp of salsa.  Enjoy!
