Spring Salad and Maple, Lemon, and Ginger Salad Dressing

I’ve seen some awesome salads lately.  I really wanted to make one myself.  Something about a bowl of freshly cut fruits and veggies just calls to me.  I just love it!  Some of the ones I’ve seen lately have been so creative and beautiful.  I knew I needed to step my game up.  Here’s what I came up with.

Maple, Lemon and Ginger Salad Dressing

Spring Salad Ingredients:

Small handful of dark leafy greens

3 Tbsp chopped red onion

1/3-1/2 cucumber sliced

1/2 avocado sliced

1 cutie peeled and separated

2 strawberries sliced

1 banana sliced

1 Tbsp sunflower seeds

Directions:  Don’t overthink it; just toss it all together.

Maple, Lemon, and Ginger Salad Dressing Ingredients:

2 Tbsp avocado oil

2 Tbsp maple syrup

1 Tbsp balsamic vinegar

1/8 tsp salt

1/8 tsp pepper

1/8 tsp ginger

Juice from 1 lemon

Directions:  Mix it all up in a small bowl or cup, and drizzle over your salad.  Enjoy

This salad was amazing!  It was like eating in Heaven.  If you want a meat to pair with it, for a heartier lunch or dinner, it would go well with chicken or salmon.
