Sweet Onion Marinade – Heavenly Chicken Thighs

Delicious sweet onion chicken thighs.

I love chicken thighs!  I never bought them before I learned about the paleo lifestyle.  After reading about how good natural fats (including animal fats) are for the body, I kicked myself for spending so much on boneless, skinless chicken breasts for so long.  Oh, well.  Live and learn, right?  Anyway, chicken thighs are so fun to marinate and bake.  Their skin crisps up and they are so delicious.

So, here I had these chicken thighs, and I was in a fancy dinner, kind of mood.  Dinner was amazing.  Actually, lunch was.  I got so excited and couldn’t wait until dinner.  Fancy dinner became fancy lunch.  Lunch was amazing!

Marinade Ingredients:

1/2 cup olive oil

1/2 cup molasses

2 Tbsp balsamic vinegar

1-1/2 tsp salt

2 cloves garlic, finely chopped

1/2 red onion, chopped

Directions:  Mix all ingredients together.  Pour over between 4-6 chicken thighs in an 8″ or 9″ square pan.  Allow to marinate for at least 6 hours.  I let mine marinate for 24 hours.  Bake at 300′ for about 45 minutes and broil for 2-3 minutes at the end.  Let cool 5-10 minutes before serving.
